The shipping is automatically calculated using the shipping zone that matches the country or region (if applicable) of the Quote, and the total weight of the Items within the Quote:

If required, you can specify a Shipping Amount which will override the default Shipping Zone that would normally be applied based on the customer's location:

If an amount is not specified, the Default Shipping Zone will be used.
