The Category and Subcategory by which you can summarize your Quotes Items, in a Quotes Cost Breakdown section. In addition, Item Categories are used to calculate Percentage Based Pricing.
For example, a software company may wish to present a summary by Professional Services and License costs, which can be achieved by assigning Items which relate to these categories their own respective Item Category:

Simply click "+ Add New" to add a new Category or Subcategory when adding or editing an Item in Quoter:
